This is one of those easy meals that can be thrown together in the morning and left all day. It’s really so simple that I felt silly about putting it on the website, but Hubby kept saying I needed to share this one and I like to listen to handsome redheaded graphic artists offering advice about my blog.
My cousin Penny has recently started her own Trim Healthy Mama journey. I’m so excited for her! We were close growing up. She’s older than me by exactly 364 days. So for one whole day every year we were the same age. I seriously loved that day. Penny was always so cool, and pretty, and fun to be around. As a kid I wanted to be just like her. Now here we are, sharing tasty, healthy recipes with each other – all grown up.
A lovely perk of Trim Healthy Mama lifestyle is it’s so easy to modify favorite recipes to be on plan and weight-loss friendly. Our Nanny always made the most wonderful chocolate meringue pie during the holidays. Penny has transformed a family classic into a healthy, low carb, sugar free delight! Read on for a very special guest post from her.
I recently saw one of those click-bait type posts on Facebook about a two-ingredient BBQ sauce and I was intrigued. The recipe used ketchup and a can of soda… not exactly what I think of for a solid BBQ sauce, but it got me thinking maybe I could use a can of stevia-sweetened soda to create a simple sugar free BBQ sauce for our family’s favorite slow cooked pulled pork. The result was yummy, y’all!
This is a tasty low carb breakfast option for mommas (and papas) on the go! I love to make a batch of these and stash them in the fridge for a quick and easy breakfast that keeps us full all morning long. One of these babies makes a filling breakfast, but sometimes we’ll have one and a half if we’re particularly hungry. I think you’d have to be a lumber jack to eat two… or one of my teenage sons.

I asked some of my Trim Healthy Mama blogging buddies for their favorite Spring dishes and boy did I hit the jackpot! We’ve got a round-up of over 30 great recipes for you to celebrate Spring Trim Healthy Mama style!
