Our family really loves it, but now that we’re losing weight with Trim Healthy Mama (100 pounds together so far!) we like to take our old favorites and tweak them to fit our healthier lifestyle. This low carb Cheesy Bacon Chicken Cauliflower casserole is absolutely amazing – all the same great flavors, without the heavy carbs from the pasta and canned soup. 

 This recipe – much like all our recipes – makes a huge batch. You can definitely cut this in half if you’re a smaller family. We’ve got eight kiddos, and occasionally a friend or two will pop in for dinner so we have to feed an army. This is sort of a multi-tasking kind of recipe, you’ll have a few pots going all at once. The reward for your work at the stove is one dang tasty casserole, so hang in there y’all because it’s worth it!

Cheesy Bacon Chicken Cauliflower

Ingredients: 

  • 4-5 large boneless, skinless chicken breasts cut into chunks – chicken thigh meat would also work well
  • 2 (1 pound) bags frozen cauliflower
  • 5-6 slices bacon, diced 
  • 3 cups shredded monterrey jack cheese
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper

For the Soup:

  • 1 (8 ounce) package cream cheese
  • 1/2 stick butter
  • 1 1/2 cups chicken broth
  • 2 teaspoons onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon Glucomannan Powder

Add frozen cauliflower to a very large pot, cover with water and cook on medium heat settings. Then, dice bacon and brown in a large skillet.

While bacon is browning (don’t walk away from it for too long or it’ll will burn), cut cream cheese and butter into cubes and place in a sauce pot with chicken broth, 2 teaspoons onion powder, 1 teaspoon salt, 1/2 teaspoon pepper. Heat on medium high, stirring occasionally until butter and cream cheese have melted and are well mixed. A whisk is helpful to use for a smoother soup.

Remove browned bacon bits from the pan – but leave that beautiful bacon grease. Place bacon bits on a plate with a paper towel and set aside for later. Try not to eat all the little bits while you’re cooking… like I do… Next, place chicken chunks into the large skillet with the bacon grease, adding 1 teaspoon salt, 1 teaspoon garlic powder and 1/2 teaspoon pepper to season. Cook on medium high, turning the meat occasionally until brown and most of the liquid has cooked out of the meat, for about 20 minutes or longer.

While the chicken is cooking whisk soup until smooth. Add 1/2 teaspoon Glucomannan Powder, whisk well and heat for an additional five minutes on medium, stirring often. After five minutes remove from heat and allow soup to sit while you finish the chicken. The soup will thicken after a few minutes on its own.

Once chicken has cooked, drain the water from the cauliflower and return cauliflower to the large pot. Add 2 cups shredded monterrey jack cheese, cooked chicken, and soup.

Stir to mix well, then pour into a large casserole dish.

Cover with 1 cup shredded monterrey jack cheese and bacon bits. Bake uncovered in the oven at 400 degrees for about 20-30 minutes, until browned on top.

    I made this and added 2 extra bacon, 2 Garlic cloves, 1 1/2 tsp red pepper flakes and half a cup sharp cheddar. Oh and i just used 1 large can of soup. Very good.
