Chocolate Banana Bread - made easy with cake mix!

When I made this tasty treat, my husband actually said, “I think it’s too chocolatey.” And that’s when I knew he had completely lost his mind. All these kids have driven him crazy. There’s no other explanation for saying something so ridiculous. Too chocolately? Bless his heart. He’s gone bonkers.

This decadent Chocolate Banana Bread is indeed VERY chocolatey. But not “too” chocolatey. There’s no such thing. A half cup of coffee really boosts the richness, too.  And of course, this recipe uses cake mix to speed things up in the kitchen. I love making mini loaves as gifts for friends and neighbor around this time of year. This recipe makes about five mini loaves or two large loaves.

Chocolate Banana Bread – made with cake mix

Ingredients:

  • 1 box chocolate cake mix
  • 3 very ripe bananas
  • 1/2 stick butter, melted
  • 1/2 cup strong coffee – milk can be substituted
  • 2 eggs
  • 1 cup chocolate chips

Preheat oven to 400. Prepare bread pans with non-stick cooking spray.

In a large bowl, melt butter and add coffee. Milk can be substituted if you’re just not into coffee. I’ll forgive ya!

Add bananas and mash and mix.

Add cake mix and eggs, stir to mix well.

Add chocolate chips and stir to mix again.

Pour batter into prepared pans.

Bake at 400 for 20-25 minutes, until done.

These make wonderful gifts for friends, family, coworkers – you might even wrap one up and stick it in your mail box as a special treat to brighten your mail carrier’s day. Just be sure to label it “for our mail carrier” or something like that, so they’ll know it’s for them.

  1. I love this cake mix series you’ve got going on here. This looks like a crowd-pleaser for sure! And you need to give hubby a cold compress or something because the poor dear is clearly not right if he is making outlandish claims like something is “too chocolaty!”
