Chocolate Chip Banana Muffins made with Cake Mix

If I can use a cake mix to make muffins, I will. I get large batches of light and fluffy muffins for my family at very little cost. It’s easy to add a few of our favorite add-ins to enjoy quick and delicious muffins. This Chocolate Chip Banana Muffin recipe is one of our family’s favorites. Moist banana muffins with little bursts of chocolate are a great way to start the day.

Chocolate Chip Banana Muffins

Ingredients:

  • 1 box yellow cake mix
  • 3 large, very ripe bananas
  • 1 stick butter
  • 1/2 cup buttermilk
  • 2 eggs
  • 2 cups chocolate chips

Preheat oven to 375. Prepare muffin tin with liners, or with nonstick cooking spray.

In a large bowl add bananas and butter. Microwave for 2 minutes to melt butter and soften bananas.

Use a large spoon to mix well, making sure to break up any large chunks of cake mix. It’s okay to stir and stir with this recipe – you won’t have tough muffins from over mixing.

After mixing well, add chocolate chips.

Bake at 375 for 18-20 minutes, until done. A fork inserted into the middle should come out cleanly.

    Can I use this for mini loaf bread pans instead of muffins? I need something for the memebers of my tomball study club group.

      Hi Cecillia :) It should be just fine to use mini muffin pans – but I would omit the buttermilk, for a denser, sturdier bread. This recipe is very similar to my easy banana bread recipe.
