Chocolate Chip Cake Mix Cookies

Is there anything more wonderful than a warm, chewy, chocolate chip cookie? I don’t think so, my friend. Nothing makes you feel more cozy than a pan full of freshly-baked cookies. I’m picky about my cookies. I want them to be buttery, moist, chewy with a hint of crisping around the edges and packed full of chocolate chips. In the past I’ve made them from scratch – but now that I’ve discovered how easily I can get the same homemade results using boxed cake mix my world has been forever changed!

We’re big fans of cake mix cookies here at Casa de Coers. I buy several boxes of cake mix on sale and keep them stored until I need to whip up a batch of cake mix cookies to satisfy a sweet craving. That tends to happen at least once a week around here. It’s a good thing these are so easy to make! I usually have my baking apprentice (the 12-year-old) make these while I’m busy with the twins. With only four ingredients it’s definitely kid-friendly.

Cake Mix Chocolate Chip Cookies

Ingredients:

  • 1 box yellow – or butter – cake mix
  • 1 stick of butter (melted)
  • 2 eggs
  • 2 cups of chocolate chips

Preheat oven to 350. Prepare a baking sheet with parchment paper. Β In a large bowl, melt butter. We usually microwave ours for about 35 seconds and stir until melted throughout.

Add cake mix. It’s best to pour this directly on top of the melted butter to form a protective layer for the next ingredient: eggs. If you add eggs to hot butter, you’ll get scrambled eggs. It’s not good for cookies. Adding the cake mix over the melted butter gives the butter enough time to cool before coming into contact with the eggs.

Add eggs and stir to mix well. The batter will be thick and sticky.

Add chocolate chips and stir to mix well. Scoop rounded spoonfuls onto baking sheet.

Bake at 350 for 8-12 minutes. Remove from oven and allow time to cool. It’s hard… but you have to or you’ll burn your mouth. I speak from experience.

Using real butter gives these cookies a nice flaky texture. Buttery, soft, chewy and oh-so-chocolatey! Our family loves Chocolate Chip Cake Mix Cookies.
