I love to bake. I love mixing ingredients, smelling the goodies in the oven, sharing yummy treats with my family. I love baking from scratch and feeling like a boss in my kitchen. But lately, with 17-month-old twins, a soon-to-be three-year-old, three teens, and a baby due in two months… I just don’t have that much time. Luckily I know plenty of short-cut recipes like this one! These simple Cinnamon Cherry Mini Muffins are made with canned cherry pie filling and cake mix. 

And best of all? They have delicious Hershey’s Cinnamon Chips baked right into the muffin! I am a certified cinnamon chip addict. The first step is admitting you have a problem, and I do. But I’m not interested in anymore steps. I just want my cinnamon chips, thank you very much. Try some in your cookies and muffins, and see what all the fuss is about.

Cinnamon Cherry Mini Muffins – made with cake mix

Ingredients:

  • 1 box yellow cake mix
  • 1 can cherry pie filling
  • 2 eggs
  • 1/2 bag Hershey’s Cinnamon Chips
  • powdered sugar to sprinkle

Preheat oven to 400. Prepare mini muffin pan with non-stick cooking spray.

In a small bowl beat together eggs. In a large bowl add cake mix, half the bag of cinnamon chips (about 1 1/2 cups) and one can cherry pie filling.

Add eggs and stir to mix well. The cherries will break up a bit during mixing, and that’s perfectly okay.

Spoon a small amount of batter into prepared mini muffin cups.

Bake at 400 for 12-15 minutes, until done. Remove from pan. Now, these are perfectly fine to eat as is… but when you can add a sprinkle of powdered sugar, why not, right?

  1. these sound delicious and simple is appreciated in my cooking. I do not have the mini sized muffins tins. Do you think regular size would work? I am thinking just a longer bake time.
