I’m in love with this side dish. It’s scrumptious. I don’t say that word a lot… but this is totally the side dish worthy of that title. You can even drag it out and say scru-ump-shoo-usss. Butter, cream cheese, bacon, cheddar, chives – it’s everything you love about a fully loaded baked potato, but without the starchy carbs to weigh you down. Even the most die-hard cauliflower hater will gobble this up. 

My hubby and I are loving life on our Trim Healthy Mama diet. When we enjoy S (satisfying) meals, we get lots of yummy butter and cheese. But we didn’t totally abandon carbs. That’s the beauty of this new healthy lifestyle. We’re able too incorporate healthy grains and carbs – and still lose weight. You’ve got to buy the book and get started!

This Loaded Baked Fauxtato Casserole is a perfect side dish when you’re craving baked or mashed potatoes. 

Loaded Baked Fauxtato Casserole

Ingredients:

  • 2 (size) bags frozen cauliflower florets
  • 8 ounces cream cheese
  • 1 stick butter
  • 1 cup shredded cheddar cheese
  • chopped green onions
  • 3-4 slices bacon, chopped
  • Salt and Pepper to taste

Cook frozen cauliflower in water and salt until soft. While cooking cauliflower, chop and cook bacon.

Also cube cream cheese and butter to add later.

Drain water from cauliflower and return to pot. Add cream cheese and butter and mash and mix until well combined and creamy.

Add salt and pepper to taste, and mix well. Pour into baking dish.

Top with shredded cheddar cheese and chopped green onions.

Pop your casserole into the oven and bake at 400 for 20-30 minutes.

Ingredients

  3. This looks so delish! I’m planning to make it to go along with your slow cooker pot roast like suggested in that recipe. I’m wanting to do this on a day when I’ll be out, so the slow cooker roast will be perfect to come home to. My question is, do you think it would hold up well to prep this fauxtato casserole the night before up to the point of cooking and refrigerate it? Then just pop it in the oven half an hr before dinner while I make the gluccie gravy for the roast? :)
