Loaded Baked Fauxtato Casserole

Loaded Baked Fauxtato Casserole from thecoersfamily.com

I’m in love with this side dish. It’s scrumptious. I don’t say that word a lot… but this is totally the side dish worthy of that title. You can even drag it out and say scru-ump-shoo-usss. Butter, cream cheese, bacon, cheddar, chives – it’s everything you love about a fully loaded baked potato, but without the starchy carbs to weigh you down. Even the most die-hard cauliflower hater will gobble this up.

My hubby and I are loving life on our Trim Healthy Mama diet. When we enjoy S (satisfying) meals, we get lots of yummy butter and cheese. But we didn’t totally abandon carbs. That’s the beauty of this new healthy lifestyle. We’re able too incorporate healthy grains and carbs – and still lose weight. You’ve got to buy the book and get started!

This Loaded Baked Fauxtato Casserole is a perfect side dish when you’re craving baked or mashed potatoes.

This looks so delish! I’m planning to make it to go along with your slow cooker pot roast like suggested in that recipe. I’m wanting to do this on a day when I’ll be out, so the slow cooker roast will be perfect to come home to. My question is, do you think it would hold up well to prep this fauxtato casserole the night before up to the point of cooking and refrigerate it? Then just pop it in the oven half an hr before dinner while I make the gluccie gravy for the roast? :)

That’s a great plan Laura! And it should hold up just fine :)

I’m just now starting THM. I lost 40 lbs. on Atkins and after 6 months of it I became tired of the limited selection. I gained 12 lbs back! Ugh! Then my friend told me about THM & I’ve been on again / off again for the past 2 weeks. I’m down 10 lbs. without trying! I’m looking forward to implementing your system in my lifestyle! Thanks so much for sharing! Janice Remick, Columbus, GA

Hi, Amanda! I took your recipe and added a pound of ground turkey to the recipe to make it an entree. Does this still make it an S?

    1. Amanda Coers

That sounds like super yummy S entree to me! :)

would fresh cauliflower work? If so, one head of cauliflower?

    1. Amanda Coers

Yes, one fresh head should work but might require a little longer boil on the stove to soften :)

  15. Christine

OMG, this is definitely another one I’m adding to the collection! So yummy!
