Low Carb Mexican Pizza from thecoersfamily.comMy hubby and I are certified Pizza Junkies. We love us a good slice of pizza, and being Texans we really love some delicious Mexican Pizza. We’re coming up on our one year “Trimmaversary” with Trim Healthy Mama and we’ve lost almost 100 pounds together. Trim Healthy Mama has taught us to be carb conscious – and we adore our “S” (satisfying) meals, full of healthy fats and low on carbs. Recently we discovered this amazing Holy Grail Pizza Crust and I tell ya, it’s just made our whole world a little brighter. Low carb pizza crust that tastes like regular crust! You can hold it and it won’t flop around. We’re just tickled pink, y’all. 

For me, I like to have just the hint of beans on my Mexican Pizza. Beans carry carbohydrates, and are normally an “E” (energizing) food on the Trim Healthy Mama plan. But, if you’re careful, you can have a couple of tablespoons in an S meal setting and still stay under the recommended carb limit. The rest of our pizza toppings are all low carb. If you’d like, feel free to sprinkle 1/3 cup whole beans, pinto or black would be great – or simply skip the beans all together. 

I cooked two pounds of hamburger meat, seasoned with cumin, salt, pepper, paprika, and chili powder – mixed with a small amount of salsa to make taco meat. I reserved about 1 1/2 cups of taco meat for our pizza and saved the rest for Taco Salads the next day.

This recipe makes enough pizza for two people, more if you add a small salad or other veggie side dish.

A few tips for the Holy Grail Pizza Crust: we like to add 2 large tablespoons grated parmesan cheese, a teaspoon garlic powder, and a tablespoon of dried parsley. We also use parchment paper to make sure the crust doesn’t stick to the pan during cooking. 

Low Carb Mexican Pizza

Ingredients:

  • 1 prepared Holy Grail Pizza Crust
  • 3 tablespoons refried beans – or 1/3 cup pinto or black beans (optional)
  • 1/3 cup salsa
  • 1/2 pound cooked and seasoned taco meat
  • 1 cup shredded cheese – we like a Monterrey/cheddar blend
  • 1 cup chopped lettuce
  • 1/2 large avocado, sliced
  • Additional toppings: fresh cilantro leaves, black olives, additional salsa, a dab of Greek yogurt

Prepare the Holy Grail Pizza Crust according to directions. If you’d like, dab on three tablespoons of refried beans and spread thinly over the entire crust. Next add about 1/3 cup salsa and spread over crust. If you prefer whole beans, spread the salsa, then sprinkle 1/3 cup beans.

Next add cooked taco meat, sprinkling over the entire pizza crust.

Add shredded cheese and bake in oven for five minutes – just long enough to melt the cheese.

Next add chopped lettuce and avocado slices.

Slice pizza and individually add additional toppings like greek yogurt, black olives, cilantro, and salsa.

Seriously, y’all – this crust is LEGIT. Firm, handles all kinds of toppings, slightly crisp with some chew – and totally tasty!

    Made this tonight! All I can say is AMAZING!!!! Thank you for the recipe!! My dough was sticky even after I added more almond flour. It still turned out really good!!! This will be one we do every week!!!

    Have you tried Black Soy Beans? Very low carb, very high flavor/protein!

      I haven’t 🙂 I try to stay away from soy because I grew a benign tumor in my breast tissue after consuming a lot of soy one year – about seven years ago

    What kind of salsa do you use? I know a lot of commercial salsas have sugar or high fructose corn syrup in them and I want to stay away from that.

      I generally use Pace picante sauce. I haven’t seen sugar or high fructose corn syrup in the ingredients yet, but I’ll be keeping an eye out!
