No Pasta Salad

Pasta salad is a favorite summer side dish in our family. Light, creamy, and cool – it’s the perfect side for grilled meats. We’re not really into pasta right now, since we’ve been enjoying losing weight on the Trim Healthy Mama eating plan.  But with a few simple changes we were happily enjoying a delicious No Pasta Salad this past Memorial weekend. Scott and I have lost a combined 50 pounds in less than four months! Now that we know how to properly pair foods for optimal weight loss and health benefits, we’re both feeling amazing!

One of the great things about this No Pasta Salad is its versatility. You could easily make this salad a meal by adding chunks of cooked chicken breast, diced ham, or even thinly sliced steak. If you prefer your pasta salad on the creamier side, simply add half a cup of non-fat Greek yogurt, or 1/4 cup low-fat mayonnaise. 

Fellow THMers can switch this dish up to fit Fuel Pull, Energizing, or Satisfying guidelines. For FP, omit the olives and feta cheese. Your salad will be less creamy, but still fill you up with lots of great flavor. For an E meal, omit the cheese and olives, and add a cup or two of cooked quinoa or brown rice along with a lean protein source like grilled chicken breast or even shrimp. If you’d like a deeply satisfying S meal, add THM approved mayo or Greek yogurt, a little extra cheese, plenty of your favorite meat, some diced avocado and enjoy!

No-Pasta Salad

Ingredients:

  • 1 head cauliflower, washed and chopped
  • 1/2 head purple cabbage, shredded and chopped
  • 2 cucumbers, quartered and chopped 
  • 1/2 tomato, chopped
  • 1/2 cup shredded carrots
  • 1/3 cup sliced black olives, or purple or green olives
  • 1 1/2 cups feta cheese
  • a handful, or about 1/8 cup diced green onion
  • 4 strips turkey bacon, cooked and crumbled
  • 3 tablespoons lemon juice
  • 1 tablespoon dried dill weed
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon salt
  • 1 teaspoon ground black pepper

Be sure to scrub the cucumbers. I use hot soapy water to help strip any pesticides and wax. It helps to keep the peels on for this salad, so the cucumbers won’t get mushy. But feel free to peel your cukes if you prefer. Cut cucumbers in half and remove the end pieces. Next, slice down the middle.

Then slice again length-wise.

Next chop into small pieces.

Add to a very large mixing bowl. Next add shredded carrots and chopped tomato.

You can choose to add your olives whole or sliced, I prefer sliced.

Next add feta cheese.

Prepare purple cabbage. Rinse and remove any loose outer leaves. Carefully cut the cabbage head in half. This will make it easier to work with and keep it from rolling all over your cutting board. Again, please be careful.

Make several cuts inward, towards the core.

Cut around the core until you have a big cube of way-too-tough cabbage left from the middle. It will resemble the Borg spaceship. And if you know what I’m talking about, then we’re going to be good friends. If not, it’s okay. I still think you’re cool.

You can save that big ol’ chunk and boil it up for a nice cabbage soup sometime. Or if you’re some kind of fancy farmer with chickens and goats, your critters will enjoy this little treat. You can also chunk this in the trash and not tell a soul. It will be alright. 

Finely chop the cabbage and add to the bowl.

Next we’ll prep and chop the cauliflower.

Add chopped cauliflower to the bowl. Then add seasonings and lemon juice.

Now the fun part: mix, mix, mix. It’s best to let this salad rest in the refrigerator for a few hours, or overnight. The feta cheese will blend with the lemon juice and seasonings to create a very light dressing.

    Girl, you had me laughing up a storm…Borg Salad ROFL. I wonder how Picard would feel about that? Warf (who I have met, shook hands with and hugged! AWESOME) might actually go for that ya know, hee hee. Going to make this either today or tomorrow. Gotta keep the Feta, so I’ll be totally out of E range, but that’s ok. Can’t eat Es all the time. What fun is there in that?

    PS…I usually chomp on the Borg spaceships for a while, and then they get thrown out. Just FYI 😉
