Pork Rind Pork Chops

Delicious crispy pork chops – no frying necessary! Crushed pork rinds make the breading for these delicious pork chops. You get all the great crispiness of a fried pork chop, baked in the oven with no mess. 

And the extra great part? They’re Trim Healthy Mama friendly. That’s right, I can eat pork rinds and still lose weight. Does your “diet” let you do that? I absolutely LOVE pork rinds – or chicharrones as we call them around here. I have the palate of a truck driver. Give me a bag of deep fried pig skin and a fizzy soda and I’m in heaven. It’s really shameful. But, luckily I came across a recipe suggestion on the Trim Healthy Mama Facebook Group page. Mamas were using pork rinds to bread chicken for a delicious, crispy fried chicken crunch. I thought it was absolutely brilliant and decided to do the same with thinly sliced pork chops.  

Pork Rind Pork Chops

Ingredients:

  • 7-8 thinly sliced boneless pork chops
  • 1 bag pork rinds
  • 1-2 eggs
  • 1 tablespoon Old Bay Seasoning

These pictures will show double the ingredients. I make a big batch to feed my rowdy bunch. You may or may not need to feed a small army, feel free to adjust according to your needs.

Preheat oven to 425. Spray a large baking sheet with nonstick cooking spray. Trim Healthy Mamas can use coconut oil spray to stay on plan and keep it healthy.

Pour pork rinds into a large bowl.

Use a cup to crush into teeny-tiny bits. I used my husband’s travel coffee cup, because I’m a sweetheart like that.

Whisk together eggs and Old Bay Seasoning to make an egg wash. Dip each pork chop into the egg wash.

And then coat each side of the pork chop with crushed pork rinds.

Place breaded pork chop onto sprayed baking sheet.

Bake at 425 for 15 minutes, then remove from oven and flip each pork chop over to brown on the other side. Return to oven and bake for another 10 minutes, until golden brown and crispy.
