A fork-tender, deliciously moist pork roast is a thing of beauty, y’all. I don’t think anything says “home cooked heaven” like a flavorful roast smothered in gravy. I’m in love with Glucomannan powder because now I can have the thick, rich, creamy gravy I crave without all the bulky carbs. This wonderful meal is low carb and sure to please!

I’ve said it before and I’ll say it again: I love Trim Healthy Mama. My husband and I have lost almost 100 pounds together in a year eating absolutely amazing food like this slow cooked pork roast. In the past I would open up a can of chemical-filled cream of mushroom goop and dump that onto my roast. But now I’ve learned how to make a sinful-tasting (but oh so good) cream gravy in just a few minutes with whole foods that won’t harm my family. 

This slow cooked pork roast with cream gravy is perfect paired with nonstarchy sides like cheesy cauliflower and buttered green beans or broccoli as an “S” (satisfying) meal on the Trim Healthy Mama plan. 

Slow Cooked Pork Roast with Low Carb Cream Gravy

Ingredients:

  • 1 large pork roast – bone-in or boneless is fine
  • 1 1/2 cups chicken stock
  • 1 cup diced onion
  • 1/2 cup finely diced mushrooms
  • 3-4 celery stalks, chopped
  • 1/4 cup dried parsley
  • 1/2 stick butter
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper

For the Gravy:

  • 1 cup heavy cream
  • 4 ounces cream cheese, cubed
  • 1/2 stick butter
  • 1/2-1 teaspoon Glucomannan powder
  • 1 1/2-2 cups cooking liquid from roast

In a large slow cooker, place roast, then add chopped celery, onions, and mushrooms.

Add seasonings, 1/2 stick butter (sliced), and chicken broth.

Cover and cook on low for six to eight hours. Remove roast from slow cooker and set aside – you can place in a warm oven (250 degrees), covered until ready to serve.

To make the gravy: In a sauce pan add one cup heavy cream, 4 ounces cream cheese (cubed), and 1/2 stick butter.

Strain liquid from slow cooker to remove any large pieces of roast or veggies and add to the sauce pan.

Heat over medium-high, whisking until butter and cream cheese has melted and liquid is smooth. Just before gravy comes to a boil add 1/2 teaspoon Glucomannan powder while whisking. Stir for one to two minutes. Reduce heat and allow to cook for an additional five minutes, stirring occasionally.

If gravy has not thickened suitably, add an additional 1/2 teaspoon Glucomannan powder, while whisking. Allow to cook for a few more minutes, stirring occasionally. Gravy will thicken as it stands, so keep that in mind. More than one teaspoon of Glucomannan is not recommended. Taste and season with additional salt and pepper if needed.
