I just want to state here and now that I feel pretty ridiculous calling this a “recipe.” I mean, it’s a tuna sandwich, y’all. I remember in the third grade our teacher handed out writing assignments like “Describe How To Make a Sandwich” – that’s what this feels like. By the way, I nailed that writing assignment. I decided to share this “recipe” because it’s one of my favorite E (energizing) lunches on the Trim Healthy Mama plan.

Our family enjoys flavorful E (energizing) meals on the Trim Healthy Mama plan. I especially love anything I can toss in the Crock Pot in the morning and enjoy for dinner later that day. Trim Healthy Mama is a carb conscious lifestyle, not “low carb” – THMers need healthy carbs to fuel our metabolisms and support overall health. When enjoying an E meal, it’s important to keep fat content low. This recipe uses lean chicken breast meat, cooked until tender in lemon juice for a light, bright meal.
