Trim Healthy Mama Black Bean Quesadillas

One of the first assumptions when people hear about Trim Healthy Mama is that it’s a low carb lifestyle. Not true! We Trim Healthy Mamas love our carbs! This simple dish features healthy carbs like black beans and brown rice to help keep us energized and losing weight. The Trim Healthy Mama plan wisely includes healthy carbs that are full of fiber. These kinds of carbs are absorbed slowly into our systems, avoiding spikes in blood sugar levels. To keep these quesadillas in an E (energizing) setting on the Trim Healthy Mama plan, we use black beans with low-fat Laughing Cow Cheese and chicken breast. 

Our family loves this quick and easy meal because it’s simple to create a Crossover for our kids to enjoy, simply by swapping out the Laughing Cow cheese for regular, full fat shredded cheese. My husband and I have both lost over 40 pounds each in just six months, but our children certainly don’t have any pounds to lose. While we want to continue with our weight loss (hubby is only 5 pounds away from his goal!) we want to make sure we’re giving our kids the healthy fats and carbs combination they need for their growing bodies. 

It’s important to keep an eye on the fat content for these quesadillas. Trim Healthy Mama E (energizing) meals need to keep fat to 5 grams or less. There are 2 grams of fat in each whole wheat low carb Mission tortilla, and 2 grams of fat in each wedge of light Laughing Cow cheese. There is a very minimal amount of fat in the chicken breast meat, and none in the black beans. One quesadilla is perfect to fit E meal guidelines, any more would lead into Crossover territory. You can buy the Trim Healthy Mama book to learn more about the different meal categories. We like a spoonful of nonfat Greek yogurt with salsa for dipping.

Trim Healthy Mama Black Bean Chicken Quesadillas

Ingredients:

  • 1 can black beans, drained and rinsed – or about 1 1/2 cups cooked black beans
  • 1 large can chicken breast meat, drained – or about 1 cup cooked chicken breast, chopped
  • Low carb whole wheat tortillas
  • Light Laughing Cow Cheese – we like the chipotle flavor for this recipe 
  • Additional seasoning, according to your family’s taste – we like: 1 teaspoon salt, 1 teaspoon garlic powder, 1 teaspoon ground cumin, 1/2 teaspoon black pepper, and several large pinches of fresh cilantro

Drain and rinse the black beans and try to shake out as much water as you can. Drain the chicken as well. Combine the black beans and chicken in a large bowl with seasonings and mix.

Next, spread light Laughing Cow Cheese onto one low carb tortilla. Then add several spoonfuls of beans and chicken to one half of the tortilla.

Lightly spray a nonstick pan with coconut oil and toast each side of the quesadilla, cooking on medium high heat for about one and a half minutes on each side.

For a great crossover for kids and folks not looking to lose weight, you can use full fat shredded cheese. Here’s a look at one of our two-year-old twins’ plates:

We love that our whole family can easily enjoy the same meal with just a few simple tweaks based on individual needs! That’s the beauty of the Trim Healthy Mama lifestyle. Mommy and Daddy can lose weight and kiddos get great, healthy meals for growing bodies.

For the Spanish Brown Rice:

  • 4 cups water
  • 2 cups brown rice
  • 1 can Rotel diced tomatoes and green chilies, drained
  • 1 tablespoon dried cilantro, or several sprigs of fresh
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder

Bring 4 cups of water to a rolling boil, add 2 cups brown rice and cover. Reduce heat to a low simmer and allow to cook undisturbed for 45 minutes. After cooking, add one drained can Rotel and seasonings, mix and allow to cook on low for an additional 5 to 10 minutes to remove any additional liquid.

    Thank-you, thank-you, thank-you for this recipe. I had declared tonight “fend for yourself” night but had no idea what I was going to fend for ME. I was following links on your site after clicking the Lemon Butter Cake that Jennifer Griffin posted on facebook today. I saw this, and it was perfect. I had leftover smoked turkey breast and a partial can of black beans already in the fridge; I had not thought of Laughing Cow for the cheese in quesadillas. My dinner was ready in less than 10 minutes, and it was perfect! Big and filling. And healthy! Thanks again for sharing your journey.

    I’m wondering if you can have the quesadilla and the spanish rice in one meal? That wouldn’t be over the 45 grams of carb limit for an E?

      There’s not a large enough amount of beans in the quesadilla to push you over. A side serving of rice should be 1/3-1/2 cup. 🙂
