 This banana bread is packed with protein and could easily serve as a delightful breakfast. Bananas are high on the glycemic index and can cause spikes in blood sugar. While in weight-loss mode on the Trim Healthy Mama plan it’s best to use bananas sparingly, and always in an E (energizing) meal. This banana bread only has one banana for the entire loaf. You can use two and it will be fine – but I like to take it easy on the ‘nanas. 

Two other surprising ingredients add moisture and protein: cottage cheese and egg whites. E meals are high in healthy carbs and low in fat, and this banana bread fits those guidelines perfectly. To keep blood sugar levels from spiking, oat bran flour is best for this bread. Sprouted spelt flour or sprouted wheat flour would also be on plan. I also used my blender to mix this batter, to fully incorporate the cottage cheese and avoid any weird bits in the bread.

Combine dry ingredients: oat bran flour, protein powder, baking soda, cream of tarter, salt and sweetener in blender and pulse until combined. You can also add this to a large bowl and stir to mix, no fuss no muss.

Next add wet ingredients: egg whites, cottage cheese, banana, and extracts. I find it is best to do this in a blender, to fully break down and mix the cottage cheese. NOTE: if you’d like more banana chunks in your bread, you can keep the banana separate, mash in a bowl and add to the wet ingredients after blending.

Pour into prepared bread pan. I lightly sprayed mine with coconut oil, just enough to keep bread from sticking. If you have some on-plan chocolate chips, go ahead and sprinkle half a cup on top before baking for an extra treat.

Bake at 350 for 45 minutes until done. A fork or toothpick inserted into the middle should come out cleanly. Set on a rack to cool before slicing. One or two slices would be a nice E (energizing) snack. Two or three small slices with some sweetened greek yogurt and a little fruit would be a great E breakfast.

      It shouldnt affect the consistency of the bread to leave out the cocoa :) a dash of cinnamon would be nice!

    This sounds so good my daughter and I are new to Trim Healthy Mama so i was wondering if i can use Truvia instead of 1/3 cup xylitol, or 3 tablespoons Trim Healthy Mama Sweet Blend and I don’t have the Trim Healthy Mama Pristine Whey Protein Powder what can i use to substitute for this?

      The protein powder just helps up the protein content, and can be substituted with another on-plan whey protein isolate powder, or left out altogether. Truvia will also work. I would start with two tablespoons and taste and add more if needed. Welcome to THM! :)

    Hi Amanda — I would really like to try your Chocolate Banana Bread but cannot find Oat Bran Flour. Is it the same thing as Oat Bran hot cereal? I found some of the hot cereal at the grocery store made by Hodgkins Mill. The only ingredient is Oat Bran. Thank you.

      You can grind old fashioned oats in the blender to make oat flour :)
