This Trim Healthy Mama pizza is made in a flash on Joseph’s Low Carb Lavash Bread for lunch or dinner. Trim Healthy who, you might ask? Trim Healthy Mama (THM) is a healthy eating guide book written by Pearl Barrett and Serene Allison… and it’s changing lives! Scott and I have embarked on our own Trim Healthy Mama journey and we’re already losing weight and feeling fantastic.

The real star of this pizza is this amazing Cucina Toscana Artichoke Bruschetta Spread. I picked up a jar at Big Lots and it’s right on the THM plan with no sugar and only healthy olive oil and other good-for-you ingredients.

Losing weight on the THM plan is fairly straight-forward. Some key principles to remember when in the kitchen are:

  • Keep fats and carbs separated. The great thing about THM is you can have healthy fats and healthy carbs, you just don’t eat them together in the same meal while you’re trying to lose weight. 
  • Eat some form of protein with every meal. Protein is your primary fuel source on the THM plan.
  • Stay away from all types of sugars. While trying to lose weight it’s best to avoid excess insulin. The THM plan utilizes sugar substitutes: Stevia, Truvia, Erythritol, or Xylitol.

Of course, you really need to read the book to get all the ins and outs along with great tips and tricks, recipes, and more. My husband loves pizza. It’s his weakness. If he didn’t have seven kids to support his boss might be able to just pay the man in pizza, he loves it so much. Since my sweet hubby is on the THM plan with me I need to be able to present his favorite food in a way that helps us lose weight. This flatbread pizza is great because it’s easy to customize. I love lots of mushrooms, green peppers, and black olives on mine but Scott would drop to the floor and die (or so he’d have me believe) if a bell pepper ever touched his lips. We can both have what we like with this simple recipe.

Flatbread Pizza

Ingredients: 

(for one serving)

  • 1 Joseph’s Reduced Carb Lavash Bread 
  • 2 large tablespoons Cucina Toscana Artichoke Bruschetta Spread – you can substitute with a sugar-free pizza sauce
  • 1/3 cup shredded part-skim mozzarella cheese
  • 8-10 slices turkey pepperoni
  • additional veggie toppings can include: onions, bell peppers, mushrooms, olives, ect. 
  • coconut or other non trans fat cooking spray

Heat oven to 400 degrees. If you’re including additional veggies like bell peppers and mushrooms it’s a good idea to cook them before adding to your pizza. These vegetables have a lot of water and it’s best to cook it out beforehand to avoid a watery, soggy pizza. I simply cook my diced peppers and mushrooms with a spritz of oil for a minute or two over high heat to reduce the water content and keep my pizza crispy.

While the veggies are cooking, lightly spray a baking sheet with coconut oil or other non trans fat spray. Place lavash onto baking sheet.

Spread sauce onto lavash.

Add shredded mozzarella cheese.

And top with turkey pepperoni and any other vegetable toppings you’d like.

Bake at 400 degrees for 8-10 minutes, just long enough for the cheese to melt. Next, crank your oven up to broil and keep a close eye on your pizza while the top browns – it only takes a minute or two. Don’t walk away! It can burn in just a few seconds.

The finished result is a crispy delicious flatbread style pizza, perfect with a side salad lightly dressed with a sugar-free balsamic vinaigrette.

      I honestly feel it’s worth it. I’ve applied the principles in the book and I’ve lost almost 10 pounds in two weeks. I really love it :)
