Diet food… it’s tough. Yes, I have to survive on Lemon Butter Cake, Pork Rind Pork Chops, Mozzarella-filled Mini Meatloaves, Strawberry Cupcakes, and French Toast. Y’all should just feel sorry for me. I’m wasting away! I’ve lost 40 pounds in five months. And I get to eat amazing food. I talk about it all the time these days, but I really LOVE Trim Healthy Mama. It’s so easy to tweak all my favorite foods into new, healthy dishes, like this delicious melt-in-your-mouth pot roast with gravy.

This has to be the easiest gravy I’ve ever made. I don’t have to fiddle with browning flour in butter or bacon grease. All I have to do is whisk a little glucomannan into some broth and voila! Instant gravy that won’t give me saddle bags. “Glucc-a-what??” you ask? Glucomannan is a thickening agent. It comes from the konjac root, and it’s great for constipationweight loss, blood sugar control, and lowering cholesterol. Super healthy for you – and it makes an awesome gravy. How rad is that?

In the past when I’ve slow-cooked a roast, I would open a couple of gloopy cans of beef gravy, loaded with carbs and all kinds of chemicals. But now I can make a pot roast that will please any crowd with all-natural whole foods. It’s one of our favorite dinners to make when we have company over for dinner. This roast is wonderful paired with our Loaded Baked Faux-tato Casserole

Trim Healthy Mama Pot Roast with Gravy

Ingredients:

  • Large beef roast
  • 1 stick butter
  • 1/2 medium-sized yellow onion, chopped
  • 1 1/2 cups baby carrots
  • 4-5 celery stalks, cut in large pieces
  • 1 cup sliced mushrooms 
  • 1 tablespoon salt, more if needed
  • 1/2 tablespoon ground black pepper
  • 2 tablespoons dried parsley
  • 2 teaspoons garlic powder
  • 2 cups water

For the gravy:

  • 2 cups broth from roast after cooking 
  • 1/2 teaspoon glucomannan
  • additional salt and pepper as needed

In a large slow-cooker, place your roast fat side up. This helps the fat render down into the meat during cooking and keeps the roast from drying out. Slice butter and tuck around the roast.

Next, chop onion, celery and add to the slow cooker, tucking veggies around the roast, along with the carrots. Save the mushrooms to add to the pot about an hour before serving. Add salt, pepper, garlic powder, and parsley.

Add water and cook on low for 6-8 hours. If you can, every couple of hours, swing by and use a ladle to spoon the broth over the roast to keep it flavorful and moist. After your roast is fully cooked, remove the meat and veggies from the slow-cooker and set aside.

What’s left is liquid GOLD, baby. A beautiful, butter-based broth that is going to make a killer gravy.

It’s best to strain two cups of broth to remove any veggie and meat bits for a lump-free gravy. Nobody likes lumps. In a sauce pot, heat the broth over medium-high heat until steamy. Then carefully sprinkle 1/2 teaspoon glucomannan powder while whisking.

Whisk for a minute or two to fully incorporate the glucomannan into the broth, then stir for about five minutes as the gravy heats. Give it a taste and add any additional seasonings according to your family’s taste preferences.

After five minutes, remove from heat and allow to sit for a minute or two while you get the rest of dinner ready. The longer the gravy sits, the more it will thicken. If you need to, you can always whisk a little more broth into the gravy to thin it.

This is an S (satisfying) meal on the Trim Healthy Mama plan. Though there are a few carrots pictured for color, it’s best to pair this roast with non-starchy veggies like cauliflower, broccoli, spinach or some green beans.
